I was sick yesterday and my boy was sweet enough to make me soup. We were out of chicken so he did a sort of vegie and potato soup which turned out really well, but we all know the ultimate I’m sick food is chicken noodle soup. We have a variation in our house of the potatoes instead of noodles because they have potassium, which if you’re trying to stay hydrated, is a necessity.
Ingredients:
Chicken (with bones and skin, I prefer thighs for soup)
Celery
Carrots
Potatoes
Mushrooms
Olive Oil
Wine
Sweet Onion
(Anything else you think would go well in this. Sometimes we do add noodles just to fill it out and get the calories in the person probably needs. I’d add bacon too if it was just for me since my boy doesn’t like bacon (I know!))
Hot Sauce.
Salt and other spices.
You’ll notice I didn’t put any amounts of ingredients in there, and pretty much left the ingredients list wide open with 9, that’s because I’ve found it’s pretty hard to ruin soup. Throw whatever in there and add salt and it usually ends up pretty good.
Directions:
Chop up and peel apart the chicken so it’ll be basically bite sized, and get all the bones and skin out – BUT KEEP THEM.
Boil the chicken, bones and skin in water for about 40 minutes. Scoop the bones and skin out when everything’s nice and boiled. The bones and skin give you your broth and the bone marrow is where the nutrients that make you feel better are (thank-you, Dr. Internet 😉
Chop up celery, potatoes, carrots, mushrooms and onions.
Saute the mushrooms and onions in olive oil and wine (trust me on the wine, the alcohol cooks out and the flavor increases the soup’s dramatically).
Once the chicken bones and skin is out, throw in the celery and carrots, boil for maybe 20 minutes, or until the celery is soft, and throw in the potatoes.
Boil until the potatoes are soft. Throw in the mushrooms and onions mix (after draining out excess olive oil.)
Toss in salt, hot sauce and spices to taste. I like mine with a little kick, but only after the sore throat stage of a cold is over and I need the spicy to clear my sinuses.
Stir it up, make sure everything’s bite sized and squishy and eat up. 😀
